Blueberry Soup

Ingredients

  • Makes 4 Servings

  • 3 3/4 cup fresh blueberries

  • 1 1/2 floz brandy , berry-flavored

  • 4 tsp sugar , granulated

  • 1 tsp fresh lemon juice

  • 4 oz sugar free, fat free vanilla yogurt

  • 1 oz fresh mint (to garnish)

Directions

  1. Combine blueberries, brandy, sugar, and lemon juice in food processor or blender. Refrigerate until chilled.

  2. Divide blueberry mixture evenly among 4 bowls.

  3. Top each with 2 tablespoons yogurt and a mint.

Another favorite of mine, blueberries. Sounds heavenly.

You might want to replace the granulated sugar with a sugar substitute. That would make it have fewer carbs.
