pineapple sorbet

Ingredients
1 large fresh pineapple
1/4 c sugar
1/4 c lime juice
Directions
Halve pineapple lengthwise, remove fruit. Remove core and discard. Chop pineapple.
In blender, combine chopped pineapple, sugar and lime juice. Cover and blend for about 2 minutes or until smooth. Press mixture throught fine mesh sieve over meduim bowl. Should have about 3 cups puree, discard pulp.
Pour pineapple puree into 2 quart ice cream freezer. Freeze according to manufactures directions. If desired, ripen sorbet about 4 hours.

Pineapple is my favorite fruit. This is going to drive me crazy until I get to the store to buy the stuff I need to prepare it.
