Homemade Turkey Sausages

Ingredients

  • Makes 8 Servings

  • 1 1/4 lb Turkey, ground, 8% fat, raw

  • 1 egg whites

  • 1/3 cup fresh chopped green onion , minced

  • 1/4 cup parsley, ground

  • 1/2 tsp dried marjoram

  • 1/2 tsp sage, ground

  • 1 pinch salt (to taste)

  • 1 pinch black pepper (to taste)

  • 1 cooking spray

Directions

  1. In a mixing bowl, crumble turkey. Mix in egg white, green onions, parsley, marjoram, and sage. Add salt and pepper to taste.

  2. Shape turkey mixture into 2-inch long sausages.

  3. Coat a nonstick frying pan with olive oil-flavored cooking spray.

  4. In medium heat, fry pan sausages for 10 to 15 minutes until cooked, turning with spatula as needed. Sausages will brown slightly and should be cooked through. Remove to a serving dish.

This sounds really good. By changing the sage into anise seeds you would have Italian sausage for adding to spaghetti sauce or a healthy sausage pizza.

Serve with eggs or pancakes for that very special breakfast, lunch, or dinner.
