Homemade Turkey Sausages

Makes 8 Servings
1 1/4 lb Turkey, ground, 8% fat, raw
1 egg whites
1/3 cup fresh chopped green onion , minced
1/4 cup parsley, ground
1/2 tsp dried marjoram
1/2 tsp sage, ground
1 pinch salt (to taste)
1 pinch black pepper (to taste)
1 cooking spray

Directions

1 In a mixing bowl, crumble turkey. Mix in egg white, green onions, parsley, marjoram, and sage. Add salt and pepper to taste.
2 Shape turkey mixture into 2-inch long sausages.
3 Coat a nonstick frying pan with olive oil-flavored cooking spray.
4 In medium heat, fry pan sausages for 10 to 15 minutes until cooked, turning with spatula as needed. Sausages will brown slightly and should be cooked through. Remove to a serving dish.

This sounds really good. By changing the sage into anise seeds you would have Italian sausage for adding to spaghetti sauce or a healthy sausage pizza.
