Spicy Peanut Chicken Salad

Ingredients

  • Salad

  • 1 tablespoon rice vinegar

  • 1 large head iceberg lettuce, shredded

  • 1 large cucumber, peeled and chopped

  • 4 green onions, chopped

  • 2 cups cooked, shredded, or chopped chicken breast

  • Dressing

  • 1/2 cup peanut butter

  • 1 tablespoon rice vinegar

  • 6 packets Equal sweetener

  • 2 teaspoons dark sesame oil*

  • 4 tablespoons soy sauce

  • 6 tablespoons chicken broth

  • 1/8 to 1/4 teaspoon cayenne (red) pepper

  • * sesame oil can be found in the oriental foods section of the market.

Directions

  1. Sprinkle rice vinegar over lettuce, cucumber, and green onion, and mix well. Arrange bottom of 9 x 13-inch serving dish. Distribute chicken evenly over lettuce. In medium bowl, blend peanut butter, vinegar, sweetener, oil, soy sauce, chicken broth, and cayenne pepper, and drizzle over chicken and lettuce. Serve immediately.

This sounds delicious, I love all the ingrediants and will try it out tonight.

Ok, as a former chef (now handicapped & retired) I have long preferred other types of lettuce for salads. In this case, you should think about replacing the tasteless Iceburg with Romaine, or even better, Redleaf lettuce. Redleaf actually has more taste than the bland Iceburg, AND it contains many more nutrients! And virtually anything looks better in a salad, than iceburg, lettuce.
