Ingredients
8 ounce cream cheese, room temperature
4 TBS fresh lemon juice
2/3 cup Splenda
1/2 cup whipped cream
Directions
Combine cream cheese, lemon juice, and Splenda until smooth. Fold in whipped cream. Refrigerate until firm - about one hour.

Add your commentBeadmom, if you make your own whipped cream it doesn't have to have added sugar… I am guessing that is what the recipe calls for.
OK.. My question is doesn't whip cream have a bunch of sugar in it? Do they mean whipping cream?

Dessert – Lemon Peel Ricotta Crème
½ cup part-skim ricotta cheese
¼ teaspoon grated lemon peel
¼ teaspoon vanilla extract
1 package sugar substitute
I am new to this site and have had diabetes diagnosed for only 3 months. This recipe sounds wonderful…I would, howeer, be tempted to add blueberries either into the recipe or sprinkled over the top.

Lemon is one of my favorite fruits, this recipe sounds great.

My comment box didn't allow me to rate this recipe, but I give it 5 STARS. I changed out the lemon juice for some KEY LIME juice (I love that stuff) and used xyletol instead of splenda. OH it is fantastic. I am going to zest some lime on top. I had to slap my fingers to keep me out of it.
I am going to try this one tomorrow. I think that I am going to use pineapple juice instead. lol I like it better.
I like alone, but when I can get my hands of fresh red raspberries, I add those for some color. It's good either way to me and a nice light treat. :)
