Low Carb Cheesecake

Ingredients

  • 1 (8 ounce) package fat-free cream cheese

  • 1 (15 ounce) container part-skim ricotta cheese

  • 1/2 cup fat-free sour cream

  • 3 egg whites

  • 1 tablespoon all-purpose flour

  • 1/2 cup xylitol

  • 1 teaspoon vanilla extract

Directions

  1. 1.Preheat the oven to 325 degrees F (165 degrees C). Grease a 9 inch pie plate.

  2. 2.In a medium bowl, mix together the cream cheese, ricotta cheese, sour cream and egg whites until smooth. Stir together the flour and sugar substitute; mix into the cheese batter along with vanilla. Pour into the prepared pie plate and smooth the top.

  3. 3.Bake for 60 minutes in the preheated oven, or until the top is nicely browned. Cool completely before slicing and serving.

This recipe doesn't have a crust. I miss it, but it's a good way to reduce carbs. I have never tried stevia, (I love xylitol) so there is only one way to find out- try it and see if it works. Let us know.

what kind of crust?… could you sub stevia never tried the other sweetner?

Xylitol is a sugar substitute that is very low carb. It is available at most health food stores. I buy mine online in bulk. You can use it in recipes in the same amount. I like the taste, and it is much better than chemical based sugar substitutes.

My favorite variation is key lime cheesecake, but I haven't found a healthy recipe, just the unhealthy, but incredibly delightful cheesecake factory version…

I second that one. Was just looking at a gluten free pineapple cheesecake recipe and considering posting it eventhough I haven't actually made it yet.
