Stuffed Artichokes

Ingredients

  • 2 large or 3 small artichokes…

  • 1 1/2 ponds raw shrimp (sliced into small pieces I use frozen)…

  • 5 tablespoons butter/margarine (brand of your choice)…

  • 1 bunch green onions (chopped green tops too)…

  • 2-3 ribs celery…(chopped leaves too)…

  • 2-3 tablespoons fresh parsley (chopped)…

  • 2-3 cloves garlic (chopped)…

  • 2 cups Italian Bread Crumbs…

  • 1-2 Lemon (need slices for each artichoke stuffed & I squeeze

  • the juice of the rest into the mixture)…

  • Olive Oil..

  • Parmesan Cheese (shredded)…

Directions

  1. Boil artichokes in salted water (I use garlic powder & onion powder) for 30-40 minutes or until leaves pull out easily. Drain. Spread leaves open to remove water and thistle.

  2. While artichokes are boiling…Melt butter/margarine in large pan…add onions, celery, parsley & garlic…saute until soft

  3. Add cut up shrimp, stirring to cook them (about 3-5 minutes) or until shrimp is pink.

  4. ***DO NOT OVER COOK…THIS MIXTURE SHOULD BE VERY WET***

  5. Put mixture in a large bowl & add the breadcrumbs to it & mix well with spoon or fork. This mixture should be moist & crumbly. (I mix in about a 1/2 cup shredded parmesan cheese in).

  6. Using a spoon, filter the mixture into the leaves starting at the outside bottom of artichoke…working way to the center & ending with filling the center. Sprinkle top with parmesan cheese,& drizzle olive oil over the entire artichoke…top off with a slice of lemon (Easy Tip…I use a bowl lined with tin foil (large enough to wrap the artichoke in when finished).

  7. Serve warm/hot

  8. If refrigerated or frozen prior to eating…heat them up in oven @ 350-400 for : 30-40 minutes if thawed and 75-90 minutes if frozen. When the deep center is warm/hot they are ready to eat.
