Microwave Fish Amandine

Ingredients

  • 1/4 cup margarine or butter

  • 1 lb. fish fillets ( sole, orange roughy, walleye pike, or white fish)

  • 1/4 cup slivered almonds

  • 2 Tablespoons dry white white wine or sherry, if desired

  • 2 teaspoons lemon juice

Directions

  1. Microwave directions:

  2. Place margarine in ashallow 1 1/2 quart microwave safe-dish. Microwave on high 1 minute or until melted. Arrange fish in dish with thickest parts to outside edges; cover with microwave safe plastic wrap. Microwave on high 6 to 8 minutes or until fish flakes easily with a fork, rotating dish 1/2 turn halfway through cooking. Transfer fish to serving platter. Add almonds, wine and lemon juice to pan drippings. Microwave on high for 1 minute or until heated throughly; pour over fish. Makes 4 servings.

So do I, love fish. I try and make as many different kinds for a variety.
