DIABETIC PEANUT BUTTER COOKIES

Ingredients

  • 1 c. flour

  • 1/2 c. creamy peanut butter

  • 1 egg

  • 1 tsp. vanilla

  • 1/4 tsp. salt

  • 1 1/2 tsp. baking powder

  • 1/2 c. water

  • 1 tbsp. liquid sweetener

  • 1/2 c. salad oil

Directions

  1. Mix all together in a large bowl. Shape into balls and place on an ungreased cookie sheet. Bake at 375 degrees for 12 to 15 minutes. You may add a little more flour if desired.

When made with Splenda, they're a little crumbly, but delicious. Just handle with care.

ouizee…amounts are 1 peanut butter, 1 egg, and 1 cup of sugar (Splenda). This is a recipe one of my friends uses and it is delicious.

There is one version of a peanut butter cookie that could be adapted very easily. I don't remember the exact amounts off hand, but all it took was peanut butter, an egg, and some sugar (substitute Splenda or Truvia for the sugar and cut down on the amount used). I've made them with regular sugar and they taste just like the ones with flour in them. I think they're called impossible peanut butter cookies?

Love peanut butter with anything thanks I used soy flour instead of regular white flour. Yummiest.

However you could replace the flour with something like Atkins flour and try it that way. It would certainly cut back on the carbs.

Flour = carbs. This may be sugar free, but it's certainly NOT carb free, thereby NOT diabetic friendly.
