Crock Pot Applesauce - No Sugar Added

Ingredients
12 Gala Apples (or apples of your choice, nutritional facts are for gala) cored and peeled
1.5 TBSP Truvia All Natural Sweetner
2 tsp Ground Cinnamon
1 oz Lemon Juice
Water
Directions
Core and peel apples, slice into 8 pieces each and place all in crock pot.
Add Truvia, cinnamon, and lemon juice.
Add enough water to almost cover apples.
Cook on high for 4 hours or low for 6-8 hours.
Unplug crock pot, remove lid and let cool for about 30 minutes.
Scoop apples out with slotted spoon.
Add 1/3 at a time to blender and blend to desired consistency. Repeat with the rest of the apples.
Combine all parts and enjoy! (It's really good warm over some vanilla ice cream! But also quite delicious on it's own.)
Makes 10 servings, approximately 3/4 cup each.

I have dehydrated and then ground my stevia. I tried to steep it, but I have not figured out how to do that successfully.
How do you process the home grown Stevia?
Agave is a good option. The carbs come out to be the same as sugar, but for some of us, it is not a spike inducer. You will have to check that out for yourself. I use agave in place of honey in most cases and it works well for me.
Actually, there is enough "sweet" in the apples that you may not have to add any sweetening at all. try it that way if the sweeteners are bothering you.
If you don't care for the taste of Truvia, try stevia. It is Truvia without the manufacturer's additivives and may be more to your liking. It comes in powder and liquid, too.
I was so starved for some sweets, I went in my kitchen and made a cake out of wheat flour and heart smart butter. It turned out great and I used sugar-free apricot perserve for the topping. Of course the eggs and other ingredient helped.
I'm just hoping this apple sauce is okay for diabetics. I have a worser sweet tooth now than before diabetes.

i'm new to this list. can anybody tell me if agave nectar will work as well, and what is the conversion between sugar and agave?
Truvia, yuck. Sorry, but i just thought it tasted nasty/fake. I like Splenda, but just couldn't get with the Truvia taste. The applesauce sounds good though.

I don't process mine, so it is not canned for pantry storage. But if I keep in in the frige, it should last 3 months or so. I don't know about freezing. I don't see why not, but am not sure.
How long can you keep it? Can you freeze it?
One thing about Truvia Gabby is that it has more grams of carbs and sugar than any of the rest.

Truvia can be found with all the sugars and sweeteners in your grocery store or in the health food section of your store.
while it looks and sounds so good…it seems a bit high in sugar and carb content. Could someone maybe explain to me why it's so high? Is it due to the natural sugars in the apples? Thanks and have a great day!
