Jicama salad

Ingredients
6 oz orange. segmented
6 oz jicama peeled and cut into inch wide dice
4 oz cucumber. cut into 2 inch by 1/4 inch spears
1 lime
dash of salt and cayennne pepper
Directions
In large mixing bowl, combine all ingredients. Toss gently. chill, cover
Serve!

Mmmm, this was yummy. I served it tonight with Butterfly_8's stewed chicken. Unfortunately, my jicima was a little on the south side of fresh so I added 1/4C of fresh chopped parsley and about 2T of finely minced red onion. It was a hit. And so refreshing. I love the lime in it.

You can find jicama in most grocery store produce sections now. To me the best part of jicama is its crunchy crispness. It sort of looks like a potato on the outside, but it will be found with the refrigerated produce. I make a salad very similar to this but I also add some finely sliced radishes as well. They add a little pepperiness as well as more color and crunch.
What does a jicama taste like? Is it hot?
I am going to look for it. I like turnips,and you know I am willing to try this.
I have to admit, that was a new one for me too. But certainly am going to try it.
Jicama is a tuber, very similar to a turnip, but it is brown skinned with a white inside. It is very crisp and mild. You will like it, I'm sure. I have seen them popping up at my farmer's market, so they must be coming into season. Try it Butterfly
