Mama's Hash

Ingredients

  • MAMA’S HASH – this makes a lot, but is good the 2nd and 3rd day, reheated.

  • ¾ lb. lean ground beef

  • 1 large onion, chopped fine

  • ½ of a small cabbage, chopped fine, as for coleslaw

  • 1 can Ro-Tel tomatoes, Or 1 can stewed tomatoes

  • salt and pepper to taste and a little garlic never hurts!

Directions

  1. Heat about 2 t. oil or butter in large frying pan. Add onion and cabbage and stir fry for a few minutes. Add the ground beef and cook until it is no longer pink, stirring it into the cabbage and onion. Add the Ro-Tel, salt, pepper and garlic – stir well, put the lid on, reduce the heat and let it cook for about 30 minutes. Good over rice, noodles or potatoes. Also good to stuff sweet peppers(any color you like) and bake. You will need extra tomato juice or V8 to keep it moist while baking.
