Ingredients
3 cups Chopped Peeled Peaches
1/4 cup chopped cilantro (Optional, I don't like cilantro so I use very little)
3 Tablespoons vegetable oil
2 tablespoons white vinegar
1/4 teaspoon salt
1 large tomato chopped
Directions
In medium sized bowl combine all ingredients.
Enjoy!!!
I use this with chicken, pork and steak

Add your comment31 gr. is too high in carbs for any diabetic. oh, diabetics can eat fruits—the skins that is. peel the peaches, used the peelings with the skin and throw the rest out if a fruit is high in fructose. for example, grape skins and seeds are very healthy and low in carbs, but the fruit itself is very high in fructose and pretty much very toxic therefore. it's waaay too high in fructose for diabetics.
low carb and low fructose fruits include strawberries, blueberries, raspberries. etc. get a fructose chart. use small quantities of about 1/'2 cup of skins per serving.
to stay healthy, no one should consume more than 25 gr of fructose per day. diabetics and overweight individuals should consume about half that or less.
this recipie would be great with about 1/2 cup of blueberries, strawberries, raspberries or another low sugar berry.
no peaches, tho.
