GREEN-TOMATO PEPPER STEAK

Ingredients

  • 1 lb. beef chuck or round steak cut in thin strips

  • 11/2 c. green tomatoes cut in small wedges

  • 1 c. chopped onion

  • 1/4 c. cooking oil

  • 1 clove garlic, minced

  • 1 T. soy sauce

  • 1/2 to 1 t. salt or to taste (optional)

  • 1/2 c. chopped celery in 1/2 inch pieces

  • 1 c. green pepper cut in 1/2 inch pieces

  • 1/2 c. red tomatoes, cut up

  • 11/4 c. water, divided

  • 1 t. or more cornstarch to reach desired thickness

Directions

  1. Brown beef in hot oil. Add garlic and cook 1-2 minutes. Add soy sauce, salt and 1/4 c. of water. Simmer, covered, for approximately 45 minutes. If the meat is tender, it will be done sooner. Add more water if necessary to prevent pan from going dry. Add all vegetables except red tomatoes. Cover and cook 10 minutes. Blend the cornstarch with remaining cup of water; stir in. Add red tomatoes and cook, covered, 5 minutes stirring half way through. Serve over rice or pasta.

I will make this for my family.They will be pleased. I do not eat beef but I cook it for them to offset my chicken and fish menu.They will be so happy.
