Crock Pot Pork

Ingredients

  • 2 Pounds Boneless Pork Shoulder Ribs

  • 1 T Olive Oil

  • 1 T Montreal Steak Grill Mate (McCormick)

  • 1/4 C Slivered Onion

  • 3 Whole Cloves Garlic

  • 1/4 C Fresh Cilantro

  • 1 t Cinnamon

  • 1 t Corriander

  • 1 t Cumin

  • 1/2 t Alspice

  • 1/3 C lime juice (Fresh keylime is best)

  • 1/4 C Agave Nectar (raw or amber)

  • 1 15 oz Can of Diced Tomatoes with Garlic and Onions

Directions

  1. In a measuring cup, whisk lime juice with Agave nectar and set aside.

  2. Coat large skillet with olive oil and place raw pork in to sear over medium heat. Sprinkle with Montreal Seasoning as you turn to brown each side.

  3. While the meat is searing, place all your raw veggies and spices into 4 qt crock pot. Place each piece of meat ontop on first layer in crock pot. Be sure to leave space between each piece.

  4. Pour undrained can of tomatoes and lime juice mixture over meat, cover and turn on high for 2 hours.

  5. Reduce your heat to low and cook for another 2-4 hours until prok falls apart and maks a stew like soup.

  6. This is fantastic on rice with black beans or just in a bowl with some whole grain dipping bread.

  7. You can reduce the calories and carbs by using stevia or xylitol in lieu of the Agave Nectar. If you use stevia, only one packet should be required. None of these should spike your sugars.

@ DJS Some people will tell you fat is important to watch as carbs, others say different, that carbs are the most important thing to watch.

From my experience with a low carb high protein meal plan I lose weight on it, and am not worried about the extra calories from the fat in my eating plan. But everyone's body is different, so what is useful for me may not be ideal for you.

This sounds delicious…I'm a new diabetic and still very confused. This only has 8 g of carbs but a whopping 33 g of fat. Isn't fat as important to watch as carbs are?

I'm the other white meat guy also. Grew up on cloves of garlic put into a pork roast, loved it! we do a pineapple recipe for this + the garlic. We'll give this a try for th eFall dishes! Grandpa Bill

My wife just made puilled pork. She used a bonless pork shoulder and cooked it in a crock pot with a tomato based spicy sauce for 6 hours until it just fell apart. Tender, Delicious, and Low Carb meal when served as a hot sandwich on one slice of pumpernickel bread.

When using chicken breasts in the crock pot, I brown and put them in still frozen. The chicken comes out moist and not dry.

Agave Nectar comes from a desert succulent and is similar to honey but not processed by bees. I use the raw version of it so that is has not been processed and that keeps the glycemic index a little lower.

What is agabe nectar? And where would you find it? I've never heard of it, and stevia? We looked for that and couldn't find it either. I guess it's just living in Arkansas.
