Low sugar no bake chocolate drop cookies

Ingredients

  • 6 tbs no sugar added Nestle Quick

  • 1 tsp Vanilla extract

  • 1/2 cup Margarine (I can't believe its not butter)

  • 1/2 0% fat milk

  • 1 cup shredded coconut

  • 3 cups cooking oats

Directions

  1. Mix first 4 ingredients until smooth

  2. Mix in coconut and oats

  3. Place on wax paper

  4. Refrigerate for 1hr

  5. yields one dozen

I am alergic to coconut, so I used crushed pecans instead, YUMMY!!

Just bring to a boil or boil for how long? Quick cooking oats work?

These "low sugar no bake chocolate drop cookies" are similar to my Grandma's no bake C. C. cookies. Only they had lots of sugar and needed to cook on the stove top. Did I miss a step somewhere? If so, I might just be able to have my favorite cookies again. Sorry, caught your message as I hit the post button. Wasn't trying to be a jerk. Thank you for the update. Thumbs up.

momsjunk & jacquejo..I forgot to add. boil the first 4 ingredients, its powder Nestle quick and its a 1/2 “cup” of milk. once you post these things they cant be edited so I try to come back and let people know when I can : )

I tried this low sugar cookie and it was good. Almost like my mother's no bake cookie which had sugar, peanut butter and no coconut. I was able to find the cocnut without sugar on it so even less sugar. Even my nondiabetic friends liked it.

Sound good. I am allergic to coconut but love it. My husband likes this type of cookie. I agree with the replies about trying peanut butter. If it has no added sugar the PB could be used in place of margarine. Nuts of any type might work for all or some of the coconut. Just add a few more oats to hold it all together if you try the nuts.
I have used sugar free hot chocolate mixes a few time in recipes. Was out of ingredients were I worked nights and had to make Magic Cookie Bars the first time I tried the substitution. Never thought about using No Sugar added Nestle Quick.
If you can't guess, I love playing with recipes. I haven't looked at this part of the site yet. I'd better get busy here soon.
