Diabetic Chocolate Fudge

Ingredients
1 envelope gelatin
1/4 cup water
1 ounce unsweetened chocolate
1/8 teaspoon cinnamon
3/4 teaspoon liquid sweetener
1/4 cup water
1/2 cup evaporated milk
1/2 teaspoon vanilla
1/4 cup chopped nuts
Directions
Soften gelatin in 1/4 cup water for 5 minutes.
Melt chocolate with cinnamon and sweetener; add milk and water slowly.
Add gelatin.
Stir until dissolved.
Remove from fire.
Add vanilla, cool.
When mixture begins to thicken, add nuts.
Turn into cold pan.
When firm cut into pieces.

This sounds great am gonna try it very soon will let you know how it taste to me.
Mine always turns out a little softer than I'd like but it tastes a lot like the way I remember fudge 'way back when I could actually eat real fudge. I still need to restrain myself from 'pigging out'.

Triker, Does hubby HAVE to know what you made is for PWDs? Stuff made for PWDs is healthy — healthier than what is commercially made. You can just call it "health food" LoL!
I love all the ideas and recipes that this website has but it is hard for me to try them when I'm the only one who will eat them since my husband is not a diabetic.

I read somewhere that some agave nectars are adulterated with corn syrup. Cheaper than using the agave for some companies. I'd rather drink the tequilla! LoL!
Maybe I missed something here, but what size pieces do you cut the fudge into?
I just went to diabetes classes at Presbyterian Hospital last month. I have been a diabetic for 10 years and I now feel more empowered than I ever have after having these 9 hours of classes. It was given by a dietian and a nurse. They told us that the best sweetner for diabetics is agave liquid, and it can be found at Whole Foods or other healtlh food stores. The second best is Truvia (all natural from the stevia plant), third is Splenda, 4th is Equal, and the 5th and worst is Sweet N Low. Sweet N Low is sacchrin (synthetiic compound), Equal is aspartame (synthetiic compound), Splenta is sucralose (chemically treated sugar).
Agave is a sweet extract from agave, a succulent plant which also gives us teguila.
It is also called Agave nectar and Agave syrup.
The only sweetener I ever used with this is liquid Sweet N Low, simply because I had it on hand. I'm sure many other liquid sweeteners will work but I haven't experimented.
Can agava nector be used as the liquid sugar replacement?

I've never tried tinkering with the recipe so I'm not sure what you can get away with. I suppose dry sweetener with a touch of water should work but the only way to find out is experiment.
