Skillet Pork Chops

Ingredients
4 pork loin chops (8 oz each), well trimmed
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
2 medium onions, cut into 6 wedges each
3 medium carrots, cut into 1 inch chunks
Directions
Season both sides of the pork chops with the cinnamon, salt, and pepper.
In a large skillet, melt the butter over medium-high heat. Brown the pork chops for 4 to 5 minutes per side.
Add the onions and carrots to the skillet. Reduce the heat to low, cover, and cook for 25 to 30 minutes, or until the vegetables are tender and the pork chops are cooked through. Serve the vegetables with the pork chops.

Looking for an alternative? Here's some rubs to try.
1/2 teaspoon on both sides of each chop. Garam Masala. Chinese five spice. Ground anise seed. Ground oregano with lemon pepper.
For veggies try any variety of mushrooms. Shallots instead of onions or garlic, Green peas, snow peas, Frozen Shoe peg corn for a little added crunch. Frozen Italian cut green beans. If you're going to cook them for this long they should be 3/4 to 1 inch thick for tenderness.

You can greatly reduce the sodium contet of this recipe by substuting regular table salt with Kosher Salt. It has all the flavor (and much better in my opinion) than table salt with less than one third of the sodium content. For those who are watching sodium intake like me.
You can use any number of spices and seasonings to this. I think the sage is a good idea, but I really prefer to use rosemary with pork. I seems to bring out the flavor of pork so much better. I generally use sage and tarragon with poultry.

I use sage too, OR a rub my BIL makes up, don't know exactly what's in it, but its good!
I like to use sage on my pork.
You could also add any or all of broccoli, green beans, cauliflower, mushrooms, etc.
this sounds yummm, gonna try it tonight. to Anonymous, I bet you could use just a tad of fresh nutmeg instead. Not sure how it would be but I'm betting it will work.
My daughter and I really liked the pork chops. Does anyone have any other spice(s) (other than cinnamon) that you can recommend for this? My husband is not fond of cinnamon.
