Vanilla Crisps

Ingredients
2 med.eggs, seperated
1/4 cup sugar
1/2 tsp. baking powder
1/8 tsp.salt
2 tsp. vanilla extract
1/4 tsp.grated lemon zest
1/3 cup all-purpose flour
Confectioners
sugar
Directions
Preheat oven to 375%F. line baking sheets with parchment. In large bowl, with electric mixer on speed, beat egg whites until foamy. Slowly add sugar,baking powder, and salt., and continue beating on medium until stiff peaks form. In another bowl, combine egg yolks,vanilla extract,and lemon zest, and beat with a fork until Thoroughly mixed.
Fold into beaten egg whites just until combined.Sift flour over eggmixture and fold in until batter is smooth and light. Drop 2 teaspoons of batter per cookie about 2" apart onto prepared baking sheets.
Bake 12 to 15 mins.or until golden. Cool on sheets 5 mins..then remove to racks to cool completely.Cookies will crisp upon cooling. Dust lightly with Confectioners' sugar before serving.
Makes 24 cookies.

I made these Vanilla Crisps last night for our tailgating party Saturday in Athens.
I want to come eat at your house, you have the best recipes. These sound yummy and I'll bake some for my regular Tuesday nite domino players.
OOPs!!! I meant so few calories. Only 21 per cookie. I can risk 2or3, and not be in trouble..
Yes that is definately a plus…I might try to sub the sugar with Stevia…so I don't have any sugar at all…I am so anxious tho to try this recipe..I LOVE lemon!! Keep the recipes coming!!

Thank goodness these cookies have so few cookies. There is no weight gained here.
