Ingredients
1 1/2 cups cold fat-free milk
1 package sugar free instant chocolate pudding mix
8 oz. frozen reduced fat whipped topping, thawed
1 cup miniature marshmallows
2 packages of sugar-free chocolate wafers (round shape)
Directions
On completion, this makes about 43 sandwiches.
In a bowl, whisk milk and pudding mix until slightly thickened, about 2 minutes. Fold in whipped topping and marshmallows.
For each sandwich, spread about 2 tbsp. pudding mixture on a chocolate wafer; top with another wafer.
Stack sandwiches in an airtight container. Freeze until firm, about 3 hours. Remove from the freezer 5 minutes before serving.

I made this pudding sandwiches over the weekend and they were a hit. My daughter and hubby loved them. Unfortunately i did not tried because i have only the regular wafers. Maybe next time. Thanks for the recipe.
What about replacing the marshmallows with some type of nut?
it sounds really yummy. i'll give it a try this weekend. i never tried frozen pudding before. must be good.
This sounds like a pretty good snack/dessert. I think if I get to try it, I might leave out the marshmallows just to try to cut down on the "richness". I don't think it will affect the texture too much, but I'm not sure…LOL Anybody know for sure?
