Chocolate Pudding Sandwiches

Ingredients

1 1/2 cups cold fat-free milk

1 package sugar free instant chocolate pudding mix

8 oz. frozen reduced fat whipped topping, thawed

1 cup miniature marshmallows

2 packages of sugar-free chocolate wafers (round shape)

Cooking Instructions

On completion, this makes about 43 sandwiches.

1. In a bowl, whisk milk and pudding mix until slightly thickened, about 2 minutes. Fold in whipped topping and marshmallows.

2. For each sandwich, spread about 2 tbsp. pudding mixture on a chocolate wafer; top with another wafer.

3. Stack sandwiches in an airtight container. Freeze until firm, about 3 hours. Remove from the freezer 5 minutes before serving.

I made this pudding sandwiches over the weekend and they were a hit. My daughter and hubby loved them. Unfortunately i did not tried because i have only the regular wafers. Maybe next time. Thanks for the recipe.
