Ranch Potato Salad

3-5 med Youkon Gold Potatoes (cut in half)
1/4 C Mayonnaise
1/2 C Ranch Salad Dressing
3/4 C Diced Celery
1/2 C Frozen (thawed) or Fresh Peas
1/4 C Sliced Green Onions
Salt and Pepper to taste

Directions

Boil potatoes for approx. 15 minutes until they are firm, but a fork will penetrate skin to the center. Drain and allow to cool. (cutting them in half again will cool them faster)

In a large bowl, combine remaining ingredients and mix well. Once potatoes are cool enough to handle, dice them skin and all. Toss them in the bowl with the mixture and refrigerated for at least (1) hour before serving.

For best flavor, make the day before you plan to use it.

Optional Garnish:
2 T bacon bits
1 t Paprika Sprinkled on top

I have not tried this with cauliflower to replace the potatoes, but I imagine it would be a great alternative and cut your carbs greatly.

Sure, I am certain that it could make it from Florida to Ohio. You would have to slap the mailmans hands though for taste testing your mail.

Sounds great. Printed the recipe and will be trying it. I have got plenty of ingredients in my garden. The only ingredient that I don't have is the yukon gold potatoes but can get the very easy. Thanks for submitting the recipe.

We had this last night for dinner with grilled pork and a green salad. I can handle the spuds if they are my only carb on the table. This is nice because it has a different flavor from your ordinary potato salad. Enjoy!
