Ranch Potato Salad

3-5 med Youkon Gold Potatoes (cut in half)
1/4 C Mayonnaise
1/2 C Ranch Salad Dressing
3/4 C Diced Celery
1/2 C Frozen (thawed) or Fresh Peas
1/4 C Sliced Green Onions
Salt and Pepper to taste

Directions

Boil potatoes for approx. 15 minutes until they are firm, but a fork will penetrate skin to the center. Drain and allow to cool. (cutting them in half again will cool them faster)

In a large bowl, combine remaining ingredients and mix well. Once potatoes are cool enough to handle, dice them skin and all. Toss them in the bowl with the mixture and refrigerated for at least (1) hour before serving.

For best flavor, make the day before you plan to use it.

Optional Garnish:
2 T bacon bits
1 t Paprika Sprinkled on top

I have not tried this with cauliflower to replace the potatoes, but I imagine it would be a great alternative and cut your carbs greatly.

I just tried a potato salad, made the usual way, with 5 potatoes, 3 boiled eggs, relish and dill pickle juice, onions mostly mustard, a dab of mayo rinsed out my jar with dill pickle juice and a dab of bread and butter juice (Just what I had) sometimes I add a head of chopped dill.

I do NOT know the mechanics of this recipe, but I ate 1 cup for dinner today, plus one weiner (I know, but it is the 4th) but my BS was just 109 two hours after eating. So by my BS I would recommend if for some. PR

I will try this, but without the peas.
Maybe add french string beans in their place.
