Strawberry Lite Vanilla Smoothie

Ingredients

  • 1 cup Fresh Strawberries or frozen with no sugar or syrup added

  • 1 cup 8th Continent Light Vanilla Soymilk

  • Artificial sweetener if needed

  • Ice cubes for thickener

Directions

  1. Add 8oz of 8th Continent Light Vanilla Soymilk. I suggest this because the carb count and sugar is so much lower than Silk or other brands of soy milk.

  2. Add 1 cup of hulled strawberries

  3. Blend to frappe consistency, do not liquify. Taste before adding sweetener because of sweetness of soy milk.

  4. Drop in a few ice cubes which will chill and thicken this further. Makes a great snack or even breakfast drink when you do not feel like eating a meal.

Hi Barnalinda, I just saw Coconut Milk for the first time last week. Sounds yummy but I did not check it for carbs etc. The smoothie that Florian has sounds great but high in carbs and sugar for me. Thanks all, love to see new ideas

We have just discovered "coconut" milk in the dairy case, in a half-gallon container, just like milk. We have been using it in coffee and with low-glycemic cereal…I bet it would also be good in a smoothie…

I have a little different version of this smoothie that I drink for breakfast
1/2 cup fresh strawberries
1/2 cup fresh blue berries
4 oz light activa vanilla yogurt
4 oz lo fat cottage cheese
4 oz no fat milk
2 packets splenda
1/2 tsp cinnamon
6 ice cubes
blend until smooth…DELICIOUS and NUTRITIOUS

To my friends here. If you like a light summer drink that makes a great snack you should try my blueberry lemon one. It is simple and pretty much has blueberries and diet lemonade and ice. There is something about the berries and lemonade together that makes it yummy to me at least. Being in Florida it is nice to have a summer drink. Tropicana puts out a great diet lemonade in the bottled soda aisle. It seems hard to find sugar-free lemonade as a rule which is why I am telling you about this one. I have not found concentrates and am too lazy to squeeze my own LOL. I make a blender full of this and keep it cold. I swim for exercise and need something fast and a good pick me up when I come in from the pool. Last summer I was running into low blood sugar issues because I LOVE the pool. I think you can find all of my recipes with just my handle.

Marme I think Elvis could have used this so he would have been a bit less of a HUNK of burning love LOL…seeing as he loved the banana and peanut butter etc thing that is why I named it for him. Sighhh I loved him too and still swoon over his music. Yup, said swoon LOL

I like that you explained why you use 8th Continent soy milk rather than Silk. As I read it I thought..well, I'll just use Silk. Until I read the reason why you prefer to use the 8th Continent because of the lower sugar content. Thank you so much! Great recipe!

You are welcome. Being a newbie I want good tasting to keep me on track so I keep inventing things LOL If you like chocolate and peanut butter together try my Florida Chocolate Elvis. They make great snacks or meal replacements.
