2 tbsp seasoned beread crumbs
2 tsp Parmesan cheese
Pinch of Italian seasoning
Pinch of salt
1tsp olive oil
1, 6oz boneless , skinless chicken breast
Nonstick vegetable cooking spray
In a small bowl combine seasoned bread crumbs, Parmesan cheese, Italian seasoning, and salt. Mix well. With a paper towel pat chicken breast dry. Lay chicken on a plate and coat with olive oil. Cover chicken with bread crumb mixture, coating all sides, and place in a backing dish sprayed with vegetable cooking spray. Sprinke remaing crumbs over chicken. Bake uncovered at 375 degree F for 35 to 45 minutes or until done. Makes 1 serving... You can increase servings using measurements above per chicken piece.

November 15, 2009 10:46 PM It turned out good. I used Stove Top Stuffing for the bread crumbs. I first used the food processor ot make the crumbs. I used Parmesan/Romano blend for the cheese. I also substituted Everglades Seasoning for the Italian. This is the kind of recipe you can play with. |
