Baked Parmesan Chicken

Ingredients

  • 2 tbsp seasoned beread crumbs

  • 2 tsp Parmesan cheese

  • Pinch of Italian seasoning

  • Pinch of salt

  • 1tsp olive oil

  • 1, 6oz boneless , skinless chicken breast

  • Nonstick vegetable cooking spray

Directions

  1. In a small bowl combine seasoned bread crumbs, Parmesan cheese, Italian seasoning, and salt. Mix well. With a paper towel pat chicken breast dry. Lay chicken on a plate and coat with olive oil. Cover chicken with bread crumb mixture, coating all sides, and place in a backing dish sprayed with vegetable cooking spray. Sprinke remaing crumbs over chicken. Bake uncovered at 375 degree F for 35 to 45 minutes or until done. Makes 1 serving… You can increase servings using measurements above per chicken piece.

I too have made this for years. I substitute garlic salt for italian seasoning and add a few tablespoons of dry white wine. Mostly I make it in the microwave.

I have been making this recipe for several years only I add a can of Italian stewed tomatoes and use chicken fingers. Interested to know how much this changes the counts on the recipe.

It turned out good.

I used Stove Top Stuffing for the bread crumbs. I first used the food processor ot make the crumbs. I used Parmesan/Romano blend for the cheese. I also substituted Everglades Seasoning for the Italian.

This is the kind of recipe you can play with.

Looks easy and I love that it is for 1, so easy to double or triple, etc. Most recipes go the other way and can be hard to cut down.
