Cheesy Spaghetti Squash Casserole

Ingredients

  • This is a Kraft Healthy Living recipe. I posted the recipe as it was and then added my additions. This was so good and so pretty! Helps to satisfy a craving for pasta too.

  • 1 3lb spaghetti squash

  • 2 T reduced fat parmesan topping or ** I used fresh grated asiago

  • 1/2 C 2% milk shredded mozzarella cheese

  • 2 plum tomatoes finely chopped or ** I used 3 large chopped plum tomatoes.

  • 1/4 C fresh chopped parsley

  • *My additions:

  • 1 tsp. fresh minced garlic

  • 1 tsp oregano

  • sea salt and pepper to taste

  • fresh chopped basil added just before serving for garnish.

Directions

  1. Wash and pierce squash so that steam can escape. Microwave on HIGH for 10 minutes or until just softened, turning over after 5 minutes. Remove from microwave and let stand 5 more minutes.

  2. Cut squash in half lengthwise. Remove seeds. Run fork thru the flesh until it turns into spaghetti-like strands. Remove all flesh and put into a bowl. Throw away one half of the shell and keep the other half for serving.

  3. Add remaining ingrediants and toss lightly. Place back into empty shell.

  4. Microwave for two minutes until heated throughout.

THIS IS AN EXCELLENT RECIPE. SPAGETTI SQUASH IS OVERLOOKED AS AN EXCELLENT DINNER SOURCE FOR MANY RECIPES AS A SUBSTITUTE FOR PASTA. I USE IT WITH SPAGETTI SAUCE AND MOZZARELLA CHEESE AND A GARNISH OF KRAFT 3 CHEESE SPRINKLE AND A BLEND OF ITALIAN HERBS. ANOTHER TASTY DISH IS TO POUR ITALIAN DRESSING, GARLIC POWDER, BUTTER AND ITALIAN HERB BLEND AND COOK IT IN THE OVEN RIGHT IN THE SHELL.

I agree with the spaghetti craving..I also put my favorite sauce over it and add meatballs.

I love spaghetti and am really excited about this recipe. It is like being able to have my cake and icing too!
