Low Carb Cream Cheese Muffins

Ingredients

  • 8oz. Cream Cheese

  • 2 Large Eggs

  • 1/4 C Xylitol (Natural Sweetener)

  • 1t Pure Vanilla Extract

  • 3T Vanilla Whey Protein (heaping)

  • 1/2T Cinnamon

  • 1/4t Pumpkin Spice

  • 1/4t Nutmeg

Directions

  1. Preheat oven to 350

  2. Combine all ingredients in a medium bowl. With an electric mixer, beat the ingredients until you have the consistency of a pancake batter.

  3. Spray muffin tin with cooking spray. Pour about 1/4 C of batter into each cup.

  4. Place into preheated oven and bake for 15 min. Don't be tempted to over cook them, they will get too dry.

  5. Turn oven off and leave the tins in the oven to cool for at least 20 minutes.

  6. They puff up as they bake, but will fall while cooling, that is what you want.

  7. Remove from tins and cover with plastic wrap and refrigerate.

  8. Serve cold with sprinkled cinnamon on top.

  9. Optional Garnish:

  10. A dab of sour cream with lemon zest

  11. Fresh fruit (strawberries, blueberries, peach, apple…you get the idea) with freshly ground nutmeg.

  12. These would be great with a cup of coffee and good conversation with friends.

  13. Enjoy!

  14. You can reduce the calories by using reduced calorie cream cheese. That is the main contributor. Just make sure it doesn't add sugar.

I have copied off the recipe to take to the store with me today to get what I need and make these with my brownies,cookies and pizza today. I am making alot of goodies for us today and then doing the laundry at the same time. That way I get my chores done at the same time as getting some goodies.
I'll send some with Bill to work so as to get something before he starts his day. Always leaves with out breakfast may be this will help.

I make these all the time and when I do, I always make a double batch and refrigerate. I get the whey protein at GNC. I use Spiritien (I think that is how you spell it). It comes in sugar free and it comes in several different flavors. I have made the raspberry flavor, the vanilla flavor and also the banana flavor. It really gives these little muffins such a nice added flavor. They taste sort ofl ike cheesecake. I love them! Thanks again for posting Gabby. This has turned out to be one of my favorite recipes here.

I made a double batch of these today and they are wonderful. They are light and fluffy in texture, sort of souffle-like. I substituted Spiru-tein for the Whey Protein powder. Spiru-tein can be found in single serve packets at GNC. It is actually a soy protein powder. One packet costs 1.99 and is enough to make on batch of muffins. It comes in flavors as well as plain vanilla. I made vanilla and banana. I also subbed Splenda for the Xylitol. They are very yummy and low in carbs! Great for any time of the day as a healthy snack. I will make these again.

xylitol is availabe at your local health food store. If you can't find it, or don't want to pay for it, I would reccommend using raw sugar. You need something with the body in it, not just the sweet.
You can also pick up Whey from your grocer in the section that has the protein and power bars, or a vitamin shop, or health food store.

You are very welcome. It is a translation of a recipie from a video that sounded so good. It was submitted by a lady in the UK, so I adjusted it to things we would have here. Try them out, you will like them if you are a fan of cheese cake.
