Fresh Zuchinni Dip

Ingredients

  • Makes 20 servings

  • A great low calorie dip for veggies, chips or pita chips

  • 1 (8 ounce) package LFcream cheese, softened

  • 3 tablespoons milk

  • 1 cup shredded zucchini

  • 3 tablespoons chopped fresh chives

  • 2 tablespoos chopped fresh parsley

  • 1/8 teaspoon salt

Directions

  1. Shred zuchinni and drain for till excess moisture is gone. In a medium bowl, mix cream cheese and milk until well blended. Mix in the zucchini, chives, parsley, and salt. Add a few drops more of milk if needed. Chill in the refrigerator approximately 1 hour before serving.

I've added this to my snack food list. Things like this are so popular at parties and everyone thinks you are a Master Chef because you bring them.

Made this last night, I really liked it. Now why didn't I ever think to do that. I never thought of using it in a dip. What a good refreshing taste. I will also use this when we do steak or chicken kabobs. Yummy!!…Debe
