Orange-Scented Green Beans

Ingredients

  • 1/2 pond green beans, trimmed

  • 1 cup halved cherry tomatoes

  • 1 clove garlic, peeled and sliced

  • 1 tablespoon salted butter

  • 1 tablespoon vegetable oil

  • 1 orange, zested and juiced

  • 2 tablespoons toasted silvered almonds

Directions

  1. In a saicepan, bring 2 qts salted water to a boil. Add green beans. Cook 4 minutes, or until crisp-tender; drain. Rinse in cold water; pat dry.

  2. In a skillet over medium heat, cook tomatoes and galic in butter and vegetable oil 1 minute, pr until tomatoes wilt.

  3. Stir in 2 Tablespoons orange juice, 1 teaspoon orange zest and green beans. Cook 1 minute. Top with almonds.

This is a wonderful idea for a side dish. It will be so colorful to serve at a dinner. The added orange will really surprise the diner.
