Country Quiche

Ingredients

  • Ingredients:

  • 1/2 cup onion, chopped

  • 1 tsp unsalted butter

  • 1 frozen 9 inch pie shell

  • 1/2 lb fat-free Swiss cheese, shredded

  • 3 eggs, beaten

  • 6 bacon slices, cooked, crumbled

  • 1 cup skim milk

  • 1/8 tsp ground nutmeg

  • 2 tbsp all purpose flour

Directions

  1. Preparation time: 10 min Servings: 6

  2. Cooking time: 30 min

  4. Preheat oven to 400°F. Melt butter in a heavy nonstick skillet over medium-high heat. Sauté onion 5 minutes, or until tender. Transfer onion and next 3 ingredients to a bowl. Combine eggs, milk, and nutmeg in another bowl. Season with salt to taste and stir in onion mixture. Pour into pie shell and bake 25-35 minutes, or until center is set.

I would use turkey bacon instead of bacon.What is the flour for?

I do not consider this a diabetic friendly recipe. Look at the fat and carbs in it.

Swiss cheese and bacon are two of my favorite ingredients in any recipe. I really like the idea of using them here in the quiche. This recipe is also a great source of protein.
