Zuchinni W/ Lemon Pepper

Ingredients

  • 2 zucchini, cut into 1/2-inch slices (use small and tender zucchinis)

  • 3 tablespoons butter, melted

  • 2 tablespoons lemon pepper

  • salt

  • paprika

  • parmesan or asiago cheese

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Place zucchini slices on a baking sheet and brush with melted butter. Season with lemon pepper.

  3. Bake in preheated oven for 20 to 25 minutes, or until tender.

I prefer asiago over parmesan too. It has such a wonderful flavor. I love it sprinkled on my fresh cooked veggies for a little something extra.

For sure, I am going to use the asiago cheese in this recipe. This kind of cheese is new for me having just tried it this year. It is a wonderful cheese to use in all kinds of recipes for excellent flavor.
