Creamy Baked Zuchinni

1 large zucchini, cut lengthwise then in thin slices
1 (8 ounce) package LF or FFcream cheese, softened
1 cup LF OR FF sour cream
1/4 cup grated Parmesan cheese
1 tablespoon minced garlic
salt & pepper
paprika to taste
mozzarella cheese for sprinkling on top

Directions

Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of water to a boil. Add zucchini and cook until tender but still firm, about 10 minutes. Drain & cool
In a medium bowl combine cream cheese, sour cream, Parmesan cheese and garlic. Spoon mixture into zucchini and sprinkle with paprika.
Top with shredded cheese
Bake in preheated oven for 10 to 15 minutes, or until heated through and golden on top.

This is one of those recipes that can be used as a main dish. All the cheese not only adds to the creaminess but makes for a rich taste as well.
