Ingredients

  • 2 tablespoons vegetable oil

  • 1 medium onion, thinly sliced

  • 2 medium zucchinis, cut into thin strips

  • 2 tablespoons teriyaki sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon toasted sesame seeds

  • ground black pepper

Directions

  1. Warm the oil in a large skillet over medium heat. Stir in onions, and cook 5 minutes. Add zucchini, and cook, stirring, about 1 minute. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini are tender, about 5 minutes. Stir in ground pepper, and serve immediately.

  2. To make a heartier meal and add some protein, add some sliced or cubed firm tofu and a splash of rice wine vinegar before serving.

There are lots of really good recipes here that are diabetic friendly. The list changes everyday too, so stop back often. :)

I want to thank you for the recipes. Is it just me or is it hard to get diabetic recipes.

If you have eaten this in Japanese restaurants you will find this to be a good copy of the dish. Enjoy.

I already know just how good this is going to taste. My local Japanese take out spot uses zucchini and onion as a side dish for all of their combo dinners. It is the teriyaki sauce that makes this wonderful. It adds a truly unique flavor with the zucchini. A wonderful idea for a side dish!
