Cucumber Crunch

Ingredients

  • 2 large cucumbers peeled, sliced

  • 1 teaspoon salt

  • 3 cups ice water

  • 4 scallions thinly sliced

  • 1/2 small green bell pepper chopped

  • 1/4 cup reduced-fat sour cream

  • 1 tablespoon white vinegar

  • 1 tablespoon sugar

  • 1/8 teaspoon freshly-ground black pepper

Directions

  1. In a large bowl, combine the cucumbers, salt, and ice water. Cover and chill for 1 hour, then drain and return the cucumbers to the bowl.

  2. Add the remaining ingredients and mix until well combined. Cover and chill for at least 2 hours before serving.

I have eaten similar recipes BD= Before Diabetis and am glad to see that an old favorite can still be eaten. I love the green peppers in it too! YUM! PR

I love the idea of the bell peppers with the cuccumbers. This is so low carb and low calorie that eating half of it is not too much and would make a great lunch. You could even add some sliced thin turkey on the side and not get any more carbs. Great idea for using cucumbers during this summer season.
