"No Recipe Zuchinni & Eggs"

Ingredients

  • This recipe is simple, easily altered to suit your tastes and a good way to use up some of those zuchinnis. You can add any other veggie to the skillet that you like, such as grated carrots, peppers, or chopped tomatoes. Be creative.

  • Oil

  • zuchinni

  • onion

  • eggs

  • salt, pepper, garlic powder, italian seasoning or oregano.

  • cheese of choice.

Directions

  1. Into a skillet add enough oil of choice to saute 1 medium to large zuchinni, 1 medium sweet onion until clear.

  2. Season with sea salt and fresh cracked pepper, a sprinkle of garlic powder and a sprinkle of italian seasoning or oregano.

  3. Crack 5-6 eggs into a skillet, directly into the zuchinni mixture. With spatula, start stirring to blend eggs and zuchinni mix until eggs are done to your liking.

  4. Sprinkle with 1/2 C of parmesan cheese, or any cheese to your liking. and enjoy.

Great idea for a quick and easy dish. I used this recipe today for my lunch and shared it with a friend. We both loved it. I added green peppers and tomato.
