Curried Fish and Watermelon Kabobs

Ingredients

  • 1 pound watermelon

  • 1-1/2 pounds mahi mahi, swordfish, tuna or other firm fish

  • 4 garlic cloves, chopped

  • 2 tablespoon olive oil

  • 1 pinch turmeric powder

  • 1 teaspoon cumin

  • 1 teaspoon coriander

  • 1 teaspoon chili powder 1/2 teaspoon salt

  • Lime wedges

Directions

  1. Prepare grill. Soak wooden skewers in water 5 minutes.

  2. Seed watermelon, cut into 2" chunks. Cut fish into 2" chunks. Thread fish and watermelon alternately onto skewer.

  3. Combine garlicand oil; brush on fish and watermelon. Combine spices; sprinkle on fish and watermelon, turning skewer to cover evenly.

  4. Place skewers on grill rack. Grill 2 minutes on each side. Serve with lime wedges.

very unusual… curious about how the mellow taste grilled… will give it a try out of mostly curiousity… like different and new ideas… thanks…

I can truly say that I have never cooked watermellon and fish together. Matter of fact, I've never cooked watermellon. BUT,,,if you say it is good, I am willing to give it a try. It sure is going to look colorful on the skewers! I love an unusual idea for a recipe!
