Baked Eggs and Mushrooms

Ingredients
2 Tablespoons butter
1 cup chopped mushrooms
1/2 cup chopped onion
3 tablespoons chopped cooked ham
1/2 cup reduced-sodium beef broth
1/8 teaspoon black pepper
4 eggs, at room temperature
1/4 to 1/2 cup shredded Cheddar or Swiss cheese
Directions
Preheat oven to 350 degree F
Melt butter in a medium skillet over medium heat. Add mushrooms and onions; saute 2 minutes. Add ham; saute 2 minutes. Add broth; cook 3 minutes. Add pepper. Divide mixture among 4 well-buttered remekins. Break 1 egg into each and bake 15 minutes. Sprinkle cheese on top; cook 5 minutes, or until eggs are set. Serves 4.

Just imagine how overnight guests would love this for breakfast! It is an easy recipe that will look like you spent so much time doing it. I love that it is served in the ramekins and cooked there as well. I am going to use the Swiss. Yum!
