Butter Bean Salad

Ingredients

  • 1 can (15-3/4 ounces) lima beans, rinsed and drained

  • 1 can (15 ounces) butter beans, rinsed and drained

  • 1 large red sweet bell pepper, chopped

  • 1 medium green pepper, chopped

  • 1 large onion, chopped

  • 4 garlic cloves, minced

  • 1/4 cup lemon juice

  • 1/4 olive oil

  • 2 Tbsp. cider vinegar

  • 2 tsp. ground cumin 1/4 tsp. pepper

Directions

  1. In a large bowl, combine the beans, peppers, onion and garlic.

  2. In a small bowl, combine the remaining ingrediends.

  3. Pour over bean mixture and toss to coat.

  4. Chill until serving.

Beans are a great source of protein and fiber. This sounds really good to me and I will be trying it soon. Thanks for sharing.

Excellent receipe for a bean salad. Adding the two kinds of peppers is going to make this taste really different and make it a colorful dish to have on the table.
