GRILLED TOMATOES

Ingredients

  • 2 slices of a medium tomato, about 1/4" thick, about 1 1/2 ounces

  • Salt and Pepper, to taste

  • Sprinkling of garlic powder

  • 1 ounce cheddar cheese, shredded

Directions

  1. Place the tomato slices on a foil-lined baking pan that will fit in your toaster oven. Top with seasonings, then the cheese. Broil in the toaster oven until the cheese is melted and bubbly. Good served with eggs.

This reminds me of a recipe i used to cook, back before diabetes. Should be fine for diabetics. It involved layering tomatoes, zuchinni; bacon, and parmesan cheese, then baking for a bit. May have to do some experimentation, see if I can come up with that again. Not really breakfast, but if you have you own garden, it was yummy, and a place to use those pesky zuchs.
Bet iI could add some eggs somehow and make it breakfast!.

I like easy and this certainly does sound like it. I have a lot of tomatoes so I am going to experiment with this recipe. I do not have a toaster oven but I thought I might be able to use the broiler in the oven. Thank you!

Mmmmmm yummy! I love this upcoming fresh produce season. Homegrown tomatoes are in my future everyday! :)
