Pineapple Chicken

Ingredients

  • 1 can (8 ounces) unsweetened crushed pineapple, undrained

  • 2 tablespoons cider vinegar

  • 2 tablespoons reduced-sodium soy sauce

  • 1 garlic clove, minced

  • 1/8 teaspoon pepper

  • 6 boneless skinless chicken breast halves (1-1/2 pounds)

Directions

  1. In a large reuseable plastic bag, combine the first five ingredients. Add chicken. Seal bag and turn to coat; refridgerate for 30 minutes. Place the chicken and marinadein an 11" x 7" x 2"baking dishcoated with nonstick cooking spray. Cover and bake at 350F for 25 minutes or until juices run clear.

I did this on the weekend. It was so easy and tasted great. I did double so I'd have left overs and wouldn't have to cook again!)

This is such a quick and easy dish to prepare. The puneapple and soy sauce are going to make this a yummy delight!
