Grilled Chicken over Spinach

1 to 2 tablespoons olive or canola oil
1 tablespoon cider vinegar
1 garlic clove, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
Dash pepper
4 boneless skinless chicken breast halves (1 pound)

SAUTEED SPINACH:
1 green onion, finely chopped
1-2 garlic cloves, minced
1-2 tablespoons olive or canola oil
1/2 pound fresh mushrooms, sliced
1 package (10 ounces) Fresh spinach, torn

Directions

In a bowl combine the firsteight ingredients: mix well. Spoon on chicken. Grill uncovered over medium heat for 7 minutes on each side until juices run clear.
In a large skillet, saute onions and garlic in oil for 1 minute. Stir in mushrooms; saute for 3-4 minutes or until tender. Add spinach; saute for 2 minutes or until wilted. Transfer to a serving platter; top with chicken.

This was very good. Except I did not grill my chicken, but cooked it in a skillet. Bet it would taste even better grilled.

Any time I see something Florentine on the menu it usually means on a bed of wilted spinach....soooo gooood. This also works well with salmon filets if you want to increase those Omega 3's in your eating plan.

Just wanted you to know that I cooked this one. It tasted as good as I knew that it would. I love spinach with anything.
