Pineapple Freezer

Ingredients

  • 2 cups fat-free, no-sugar added vanilla ice cream

  • 2 teaspoons grated orange peel

  • 1/3 cup orange juice

  • 1 can (6 ounces) pineapple juice or 1 can (8 ounces) crushed pineapples in juice, drained

  • 1 tablespoon sugar substitute

Directions

  1. Place ice cream, orange peel, jucie and sugar in blender; puree. Pour into gallon-size resealable food storage bag. Seal tightly. Freeze at least 4 hours or overnight until firm. You may need to place on counter 15 minutes before serving to soften slightly. Spoon into serving dishes.

Since I've just joined, I was looking for tasty recipes. Your recipe sound delicious, but I have one question. I don't see a listing for sugars. Is there someone who produces sugar free pineapple juice or crushed pineapple. I have not been able to find that. Hope to hear back from you.

This is a great dish for a hot summer day. If we melted it just a little bit more, we could drink it as a milkshake.
