1/2 cup unsweetened cocoa powder
2 tablespoons cornstarch
1 1/2 cups reduced-fat (2%) milk
6 to 8 packets sugar substitute or equivalent of 1/3 cup sugar
1 teaspoon vanilla
1/8 teaspoon ground cinnamon (optional)
assorted sugar-free candies (optional)
Combine cocoa powder and cornstarch in medium microwavable bowl or 1-quart glass measure. Gradually whick in milk until well blended.
Microwave on HIGH 2 minutes; stir. Microwave on MEDIUM-HIGH (70%) 3 to 4 1/2 minutes or until thickened, stirring every 1 1/2 minutes.
Stir in sugar substitute, vanilla and cinnamon, if desired. Let stand at least 5 minutes before serving, stirring occasionally to prevent skin from forming. Serve warm or chilled. Garnish with candies just before serving, if desired.

September 24, 2009 4:09 AM Use 3/4 cup heavy cream and 3/4 cup water to get the 1 1/2 cups of low fat milk. ( That will cut the carbs considerably) or to cut the fat and carbs even further, you can use 1/4 cup of cream and 1 1/4 cup of water. The lower the fat content in a product the higher the carbs. |
