Fresh Garlic Shrimp Linguine

Ingredients

  • 6 ounces multigrain linguine or spaghetti broken in half

  • 8 ounces frozen, peeled and deveined shrimp

  • 3 tablespoons diet margarine

  • 1/2 teaspoon seafood seasoning

  • 1 medium clove garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1/8 teaspoon salt (optional)

  • 1/4 cup finely chopped fresh parsley (optional)

Directions

  1. Cook linguine according to package directions, omitting any salt or fat, about 7 minutes or until al dente. Add shrimp. Cook 3 to 4 minutes or until shrimp are opaque. Drain. Transfer to medium bowl.

  2. Add margarine, seafood seasoning and garlic. Toss gently. Add cheese, salt, and parsley, if desired; toss again.

Shrimp is one of the most liked seafoods. This is a great way to serve it. The Parmesan cheese will surely bring out a wonderful flavor.
