BROWNIE MINIS

42 foil candy liners
1 box (22 1/2 ounces) brownie mix
1/2 cup water
1 large egg
1 tablespoon canola oil
11 small peppermint patties, quartered
1 3/4 cups sugar-free whipped topping (optional)

Directions

Preheat oven to 325 degrees F. Place 42 foil candy liners on baking sheet at least 1 inch apart. Coat liners with nonstick cooking spray; set aside.
Combine brownie mix, water, egg and oil. Stir until well blended. spoon about 1 tablespoon batter into each liner.
Bake 20 minutes or until toothpick inserted into centers comes out almost clean. Immediately place 1 piece of peppermint pattie on top of each' press down lightly to adhere. Place baking sheet on cooling rack; cool completely. Serve as is, or top each with 1 or 2 teaspoons whipped topping, if desired. note: these freeze well.

This seems to be very tasty and I like that they can be frozen.
