By Dietbeeties Submitted at June 29, 2009 Views 9,623 Comments 36 Likes 16

Ingredients

  • 1 pan boiling water

  • Ziploc Bag

  • 2 eggs

  • 2 tablespoons grated cheese (any kind)

  • 1 tablespoon diced sweet pepper (or hot)

  • 1 tablespoon diced onion

  • 1 tablespoon diced tomato (etc)

  • salt and pepper

  • *I also like to add 1 chopped sausage link

Directions

  1. *If you are making more than one, you might want to label the bags first. Crack 2 eggs into ziploc bag. Add ingredients of your choice or the ones listed. Let air out of bag and seal. Squish the bag with your fingers to make sure eggs and ingredients are mixed together. Drop into boiling water for about 12 minutes, check center of omelet to make sure it is done. Open bag and let omelet roll out onto plate. Easy with little clean up.

pjcsweeps—-you do not have to cook it in the bag. Swirl water until it is really swirling then pour in the stuff. Just like pouching an egg.

This is excellent and everyone has fun making them. I used it for Thanksgiving breakfast and it was a hit.

I make this in a Ziploc steamer bag. Takes about a minute or two. I added turkey ham, onion and a squeeze of horseradish sauce Really good and I too am leery of cooking in food storage bags. The steamer bags are great for lots of things…asparagus and corn on the cob are so quick and good.

BAD NEWS about cooking in the plastic bag. You are releasing toxins from the plastic into your food, and thus into your body.

I had also wondered about eggs and kidneys. I have only one kidney now, but still haven't been told to limit my intake—wondering about diet pop, coffee too. I did read where eating eggs will help to take weight off of your waist! Guess what I have been eating every morn?? hahah Maybe I should back off as moderation seems to be the key to so many problems. Hugs, Pat roth

If you have particular concerns about cholesterol, then eggs could be a concern. But as for a versatile, very low-carb diabetic-friendly food, it's tough to beat eggs. (No pun intended :-)

I am new to diabetes so I am learning but I was told I could only have 3 eggs per week. Are eggs a problem for diabetics or not ? I have a lot to learn about this little problem I have just discovered that I have.
Can you guys point me in the right direction ?

We use this camping…it's the best because with large groups everyone can do their own thing!
