Yummy Low-Carb Pancakes (Gluten-Free)

Ingredients

  • 1 cup oatmeal

  • 1 cup lowfat cottage cheese

  • about 5 egg whites

  • splash of milk

Directions

  1. Put first three ingredients into blender and blend until smooth. Add a splash of milk if the batter seems too thick.

  2. Fry 'em up as pancakes. Use spatula to flatten & shape, since batter will be thick.

  3. Serve with sugar-free syrup. Yum!

I have these pancakes at least twice a week I truly love them. Thank You they are the best. They are a must try.

Just an FYI for those with celiac (like myself) - Oatmeal is controversial whether or not it is truly gf. Some people can tolerate oats and some cannot.

This is extremely interesting. The oatmeal is one of my favorite ways to get fiber plus the fact that oatmeal tastes so good. I never thought to use it in pancakes! I will surely try this after shopping for all the ingredients.

That would be dried oats as an ingredient.
