1 cup oatmeal
1 cup lowfat cottage cheese
about 5 egg whites
splash of milk
Put first three ingredients into blender and blend until smooth. Add a splash of milk if the batter seems too thick.
Fry 'em up as pancakes. Use spatula to flatten & shape, since batter will be thick.
Serve with sugar-free syrup. Yum!
I'm guessing about 12 carbs per pancake, which isn't much. High in protein, too.

June 30, 2009 5:04 AM This is extremely interesting. The oatmeal is one of my favorite ways to get fiber plus the fact that oatmeal tastes so good. I never thought to use it in pancakes! I will surely try this after shopping for all the ingredients. |
