Pineapple Cheese Ball

2 1lb squares of low-fat or fat free creamed cheese
1 cup of raisins
1 14 oz can of crushed pineapple Lite(reserve juice)
3 packets of sugar substitute(Splenda is Best)
1 cup of crushed walnuts, pecans or pistachio nuts

Directions

Mix all ingredients in a medium sized bowl. Mix well. If dry add some of the reserved pineapple juice.

Form into a cheese ball. Refrigerate for 1 hour. Before serving roll cheese ball in the crushed nuts. Set in the middle of a plater and surround with different types of crackers. A nice change from the standard fruit and onion dips.

Serve with any type of cracker. Low fat wheat thins are good. Also a goo dip for fruit.

Oh, GOODY!! A pineapple Cheese Ball, I LOVE cheese balls and thought that I was doomed forever to NOT eating one!! See, don't give up! I love chips and dip better than ice cream and cake!! yummy, oh I guess that I have already said that! Color me gone! ha--PR

This sounds delicious! I love creamed cheese and pineapple combined. Sounds like a good thing to keep around when I want a little something sweet too. Thanks for sharing.
