Tex-Mex Breakfast Casserole

4 C coarsely crushed nacho tortilla chips
2 C shredded monteray jack cheese
1 small onion finely chopped
1 TBL butter
6 eggs
2 1/2 milk
1 (4 oz) can chopped green chilies, undrained
3 TBL ketchup
1/4 tsp hot pepper sauce (like Franks)

Directions

*Arrange tortilla chips in greased 9 X 13 X 2 baking dish.
Sprinkle with cheese.
*In a skillet, saute onion in butter until tender.
*In a bowl, whisk eggs, milk, onion,chiles, ketchup and hot sauce.
*Pour over cheese.
*Cover and refrigerate overnight.
*Remove from fridge and let stand 30 minutes before putting into a 350 oven.
*Bake uncovered for 40-45minutes or until knife comes out clean. Let rest 5 minutes before serving.

Thank you both. I love to make breakfast casseroles whenever I have weekend company. They are so easy to put together and just take out of the fridge in the morning and put in the oven. Add some fresh fruit and you have a great breakfast.

You can further reduce the numbers per serving by using reduced fat jack cheese, and egg substitute if you like.
I use white corn tortilla chips and 2% milk.
If you want to kick the "heat " up a notch, use pepper jack cheese.
This is good topped with a good fresh tomato salsa too.
