Wheat Rolls

Ingredients

  • 1 1/2 cups warm water (110 degrees)

  • 2 pkgs active dry yeast

  • 2 TBSP sugar

  • 2 TBSP canola oil (or any vegetable oil)

  • 2 tsp salt

  • 1/2 cup wheat bran (optional for added fiber)

  • 3.5 to 4 cups UNBLEACHED bread flour (white or wheat or there is now whole wheat white flour).

Directions

  1. In a large bowl stir together warm water, yeast, and sugar. Let stand until creamy about 10 minutes. After 10 minutes, add oil, salt, and 2 cups flour and 1/2 cup wheat bran. Stir in additional flour 1/2 cup at a time until dough pulls away from sides of bowl (I usually use 3 to 3.5 cups of flour) Turn unto lightly floured surface and knead until smooth and elastic (about 5-8 minutes - this is good arm exercise ) Lightly oil a large bowl, place dough ball into bowl and turn to coat with oil. Cover with plastic wrap and a damp towel and let rise in a warm place until double in volume (about 1 hour) I put it in the cold oven as then it is out of drafts.

  2. After dough has risen, deflate the dough (punch down) then turn unto lightly floured surface. Divide dough into equal sized pieces. This depends on shape you are making. Dinner rolls - 16

  3. Hamburger or Hot dog rolls - 9

  4. Shape into desired shape. Place on lightly greased baking sheets about 2 inches apart. Cover with damp towel and let rise until double in volume (about 40 min). Preheat oven to 400 degrees F. Bake 15-20 minutes or until golden brown.

This I will definitely try. I love homemade rolls. Just the fresh smell of homemade bread is heavenly. This will be healthy also.
